Start with rice and curry
A typical spread may combine dhal, vegetables, coconut sambol, pickles and fish or meat. The joy is in mixing small flavours rather than treating each curry alone.
Breakfasts and short eats
Try hoppers, string hoppers, roti and savoury short eats. Kottu is a lively evening favourite; lamprais reveals the island's Burgher heritage.
Vegetarian travel
Sri Lanka can be rewarding for vegetarians, but fish flakes, Maldive fish or ghee may appear in dishes that look plant-based. Ask with specificity.
Water and hygiene
Use sealed or reliably filtered drinking water and favour food cooked hot in front of you. Carry a reusable bottle where safe refill stations are available.
